It's a large-volume pre-mixed that is bursting full of flavours of a festive period, rendering it ideal for hosting a festive gathering. Any leftover syrup to use in brunch beverages, desserts, or to mix additional servings of this cocktail.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Combine every items in a saucepan, heat until it reaches a light boil, mixing so the sugar melts. After that, take off the stove allowing it to cool down entirely. Pour to a sealable bottle, close it and refrigerate it in the fridge, where it will keep for about one month.
For the Cocktail Base: Pour every liquid ingredients into one big jug, leave to sit for 60 minutes, then strain preferably using cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml of the premix to a cocktail shaker packed with ice, gently stirring gently for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, decorate with the cranberries adding the final touch with a quick spritz of the essential oil over the drink.
